Ham and Cheese Scones with Cranberries

Upgrade your brunch with flavorful cranberry and green onion ham and cheese scones.
Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.25 cup grated Parmesan cheese
  • 2 teaspoons white sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon red pepper flakes
  • 4 tablespoons cold butter, cut into small pieces
  • 1 cup diced cooked ham
  • 0.5 cup dried cranberries
  • 3 sun-dried tomatoes, finely chopped
  • 0.25 cup chopped green onions
  • 6 tablespoons plain yogurt
  • 6 tablespoons heavy cream
  • 0.25 cup milk
  • 0.33333334326744 cup shredded Cheddar cheese, or to taste
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C), while you position a rack on the lowest level and line a medium sheet pan with parchment paper.
  • In a bowl, blend flour and baking powder. Stir in Parmesan cheese, sugar, salt, black pepper, and red pepper flakes. Use knives or pastry blender to cut in cold butter until mixture resembles coarse crumbs. Gently mix in ham, cranberries, sun-dried tomatoes, and green onions until combined.
  • Combine the yogurt, cream, and milk in a small bowl. Gently stir into the flour mixture until the dough is moistened.
  • Transfer the dough to a lightly floured surface and gently shape it into a 1-inch thick rectangle. Slice the rectangle in half lengthwise, then cut each half into 3 equal pieces for a total of 6 pieces.
  • Evenly place scone pieces on the prepared pan and generously sprinkle with Cheddar cheese until fully covered to your preference.
  • Bake on the bottom oven rack until lightly golden, for 25-30 minutes.
