Family-friendly casserole with beef, rice, beans, tomatoes, cheese, and olives.
Ingredients:
  • 1.5 pounds ground beef
  • 1.5 cups chopped onion
  • 0.5 cup chopped bell pepper
  • 1 clove minced garlic
  • 1 teaspoon chili powder
  • 1.5 cups water
  • 0.75 cup uncooked white rice
  • 1 (16 ounce) can kidney beans, rinsed and drained
  • 1 (14.5 ounce) can whole peeled tomatoes
  • 0.75 cup grated American cheese
  • 0.33333334326744 cup chopped black olives
Instructions:
  • Preheat oven to 350°F (175°C) to create the perfect baking environment.
  • Preheat a large skillet over medium-high heat. Brown and crumble the beef in the skillet for 5 to 7 minutes. Remove and discard any excess grease.
  • Combine onion, bell pepper, garlic, chili powder, and salt with the ground beef. Sauté until the onion is softened, approximately 5 minutes.
  • In a saucepan, bring the water and rice to a lively boil. Lower the heat to medium-low, cover, and let it gently simmer until the rice is tender and has absorbed all the liquid, about 20 to 25 minutes.
  • Combine kidney beans, tomatoes, and rice with the savory beef mixture, then transfer it all into a spacious casserole dish. Finish by generously layering American cheese and olives on top.
  • Bake in a hot oven until the cheese is golden and bubbly, about 45 to 50 minutes.
