Savoury hash brown waffles with a side of crispy bacon - a must-have breakfast treat!
Ingredients:
  • 64.38 gm milk
  • 2 eggs, lightly beaten
  • 1kg desiree potatoes, peeled
  • 4 green onions, thinly sliced
  • 40.00 ml chopped fresh flat-leaf parsley
  • 35.10 gm Dijon mustard
  • 37.50 gm self-raising flour
  • 2.40 gm sea salt
  • 200g packet streaky bacon
  • 32.00 gm brown sugar
  • 27.00 gm maple syrup
  • 2 x 310g packets gem truss tomatoes
  • Olive oil cooking spray
  • 100g baby rocket
  • 125.00 ml quark cheese, to serve (see notes)
  • Extra virgin olive oil, to serve
Instructions:
  • 1. Preheat your waffle maker according to the manufacturer's instructions. 2. Grate potato coarsely and squeeze out excess liquid over a bowl. 3. Combine potato with onion, garlic, parsley, mustard, flour, salt, egg, and milk. 4. Season with pepper and mix well.
  • Ladle 2 tablespoons of batter onto one side of the waffle maker. Close lid and cook for 3 minutes until golden and cooked through. Transfer to a wire rack over a baking tray to keep warm. Repeat with remaining batter to make a total of 18 small waffles.
  • Preheat your oven to 200C/180C fan-forced and line 2 large baking trays with baking paper.
  • Prepare a tray with a wire rack. Lay out the bacon slices in a single layer on the wire rack. In a bowl, mix together sugar and maple syrup. Brush the bacon with the syrup mixture. Bake for 15 minutes, brushing the bacon with more maple syrup mixture every 5 minutes.
  • On the same tray, arrange the tomatoes next to the bacon. Drizzle them with oil and sprinkle with salt and pepper. Continue baking for 15 more minutes, basting the bacon with a maple syrup mixture every 5 minutes, until the bacon is golden and sticky, and the tomatoes are starting to soften.
  • Assemble waffles, tomatoes, bacon, and rocket on a platter. Top quark cheese with a drizzle of oil and a sprinkle of pepper. Enjoy!
