Healthier oatmeal cookies made with whole wheat flour and coconut oil.
Ingredients:
  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 pinch sea salt
  • 1 cup coconut oil, softened
  • 1 teaspoon molasses
  • 2 eggs
  • 2 cups quick-cooking oats
  • 1 cup dark chocolate chips
  • 0.75 cup dried cranberries
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine whole wheat flour, baking soda, baking powder, and salt in a bowl, then set aside.
  • In a medium bowl, mix coconut oil, sugars, and molasses until smooth and creamy using an electric mixer. Add eggs one at a time. Gradually blend in the sifted flour mixture until well combined. Stir in oats, chocolate chips, and cranberries.
  • Spoon dough in small amounts onto ungreased cookie sheets.
  • Bake in the preheated oven until edges are golden, about 8 to 9 minutes. Allow to cool slightly on the cookie sheets before transferring to wire racks to cool completely.
