Healthy blueberry muffins bursting with fresh blueberries and applesauce for extra moistness.
Ingredients:
  • 0.5 cup white sugar
  • 0.33333334326744 cup all-purpose flour
  • 0.25 cup butter, cubed
  • 1.5 teaspoons ground cinnamon
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.33333334326744 cup applesauce
  • 0.33333334326744 cup milk
  • 2 cups fresh blueberries
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare your muffin tin by lightly greasing the cups or lining them with muffin liners.
  • Combine 1/2 cup sugar, 1/3 cup flour, butter, and cinnamon in a small bowl, using a fork to create a crumbly mixture. Set the topping aside.
  • In a large bowl, mix together 1 1/2 cups flour, the remaining 3/4 cup sugar, and baking powder. In a 1-cup measuring cup, combine applesauce, egg, and enough milk to reach 1 cup; mix well. Add this mixture to the flour mixture and stir until just combined. Gently fold in blueberries. Fill the muffin cups to the top and sprinkle with topping.
  • Bake until beautifully golden and the tops bounce back when lightly touched, about 20 to 25 minutes in the preheated oven.
