Healthy muesli bar no sugar recipe

Low-calorie oat, seed, and nut muesli bars with no refined sugar. Store in fridge for 2 weeks or freezer for up to 1 month.
Ingredients:
  • 135g (1 1/2 cups) traditional rolled oats
  • 85g (1/2 cup) natural almonds, coarsely chopped
  • 55g (1/2 cup) oat bran
  • 45g (1/4 cup) pepitas
  • 35g (1/3 cup) desiccated coconut
  • 20.00 ml linseeds
  • 80g (1/2 cup) single origin honey
  • 60ml (1/4 cup) extra virgin olive oil
  • 42.00 gm fresh orange juice
  • 4.40 gm vanilla bean extract
  • 5.00 gm ground cinnamon
  • 2 eggs, lightly whisked
Instructions:
  • Preheat your oven to 180C/160C fan forced. Line a 20 x 30cm slice pan with baking paper, leaving some paper to hang over the edges.
  • Mix together oats, almonds, oat bran, pepitas, coconut, and linseeds in a spacious bowl.
  • In a small saucepan, blend honey, oil, orange juice, vanilla, and cinnamon. Simmer on medium heat for 1 minute. Pour into the oats and mix well. Stir in the eggs until fully combined.
  • Spread the mixture evenly in the lined pan, pressing it firmly onto the base. Bake until golden (about 20-25 minutes). Let it cool completely in the pan before cutting into 16 bars for serving.
