Quick and flavorful herb-marinated turkey tenderloin with zesty lemon and Italian herbs - perfect for a small but satisfying turkey craving.
Ingredients:
  • 1 lemon, juiced
  • 2 Tablespoons olive oil
  • 1 1/2 teaspoons minced fresh garlic
  • 2 teaspoons Italian herb seasoning blend
  • 1/2 teaspoon finely ground sea salt, or to taste
  • 1/4 teaspoon freshly ground black pepper, or to taste
  • 2 (1/2 pound) turkey tenderloins
  • 1 Tablespoon olive oil
  • Fresh rosemary sprigs or other fresh herbs for optional garnish
  • Fresh lemon slices for optional garnish
Instructions:
  • In a large resealable plastic bag, mix lemon juice, olive oil, minced garlic, Italian herbs, salt, and pepper. Add turkey tenderloins, seal the bag, and coat the tenderloins with the marinade by moving them inside the bag. Refrigerate for at least 1 hour, up to 8 hours.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • In a nonstick, ovenproof skillet over medium heat, shimmer 1 tablespoon of olive oil. Sear the turkey from the marinade until lightly browned, about 2 to 3 minutes per side.
  • Roast the tenderloin in the oven until fully cooked, about 12 to 15 minutes. Ensure it reaches an internal temperature of 160°F (71°C) by using an instant-read thermometer. Note: juices should run clear when pierced.
  • Once done baking, cover the dish with foil and let it rest for 5 to 10 minutes. Then, use an instant-read thermometer to check the temperature. The tenderloin should reach 165 degrees F (74 degrees C) from the residual heat.
  • Slice the dish and garnish with vibrant fresh herbs and zesty lemon slices before serving warm.
