Zesty veggie meatballs in a tangy marinara sauce over spaghetti – kid-approved in just 30 minutes!
Ingredients:
  • 1 lb ground beef
  • 1/2 cup Progresso™ plain bread crumbs
  • 1/2 cup grated carrot
  • 1/2 cup grated zucchini
  • 1 egg
  • Salt and pepper
Instructions:
  • Preheat the oven to 400°F. Combine all the ingredients in a large bowl and form 1-inch balls from the mixture. Arrange the balls in an ungreased 15x10x1-inch pan.
  • Bake for approximately 20 minutes, or until the center is no longer pink and a meat thermometer inserted into the meatball reads 160°F.
  • Serve the meatballs on a bed of spaghetti, topped with marinara sauce, and garnish with a sprinkle of fresh chopped basil, if desired.
