Master Chef John's method creates irresistibly crispy fortune cookies for sharing hilarious and meaningful messages.
Ingredients:
  • Custom or prepared paper fortunes
  • 1 large egg white
  • 0.25 cup white sugar
  • 1 tablespoon milk
  • 0.125 teaspoon vanilla extract
  • 0.125 teaspoon almond extract
  • 1 pinch salt
  • 1 tablespoon melted butter
  • 0.33333334326744 cup all-purpose flour, or more as needed
Instructions:
  • Cut out paper fortunes that are 3 inches wide.
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a baking sheet with a silicone mat or parchment paper.
  • In a bowl, mix together egg white, sugar, milk, vanilla extract, almond extract, salt, and butter until sugar is dissolved. Stir in flour until batter is smooth and falls off the whisk in ribbons.
  • On the prepared baking sheet, portion out 1 tablespoon of batter and gently spread it into a 4-inch circle using the back of a spoon. Repeat this process once more.
  • Bake the initial batch in the preheated oven for approximately 10 minutes, until crispy and golden brown at the edges while still pale in the centers.
  • Using a spatula, swiftly transfer cookies. Insert a fortune into each one. Gently fold cookies in half and press edges together. Bend over the rim of the pan, bringing ends down on either side. Curl ends towards each other. Set cookies in ramekins or muffin tins to maintain their shape while cooling.
  • Bake the rest of the batter in batches, shaping the cookies while they are still warm. Allow the cookies to cool completely before removing them from the ramekins or muffin tins.
