Homemade limoncello

Make Limoncello in advance for a delightful dessert or pour over vanilla gelato.
Ingredients:
  • 10 organic unwaxed lemons
  • 1L (4 cups) vodka
  • 735g caster sugar
Instructions:
  • Peel the lemons with a vegetable peeler, making sure to discard the white pith. Transfer the lemon peels to a sterilized 2.25L (9 cup) jar. Pour vodka over the peels, seal the jar, and let it sit in a cool, dark place for 1 week.
  • Stir together the sugar and 3 cups (750ml) of boiling water in a jug until the sugar dissolves. Let it cool. Pour it into the vodka mixture, seal, and invert. Allow it to sit for another week before serving.
