Crafting homemade limoncello: a zesty Italian lemon liqueur that's well worth the wait.
Ingredients:
  • 1 (1.75 liter) bottle 190 proof grain alcohol (such as Everclear®)
  • 20 lemons, zested, or more to taste
  • 1-gallon jug
  • 7 cups water
  • 7 cups white sugar
  • coffee filters
  • 6 clean wine bottles with corks
Instructions:
  • Mix alcohol and lemon zest in a 1-gallon jug with a secure lid. Allow it to sit in a cool, dark spot for 1 month, shaking the jug gently every few days.
  • In a saucepan, mix water and sugar over medium heat until the sugar completely dissolves. Allow the simple syrup to cool down fully, which should take about 15 to 30 minutes.
  • While the simple syrup cools, set up a sieve lined with coffee filters over a large bowl. Strain the alcohol mixture through the filters, replacing them as necessary until all of the mixture has been filtered. Filter once more for thorough sediment removal. Discard the used coffee filters and zest.
  • Pour the perfect amount of simple syrup into the alcohol mixture to achieve the desired alcohol-by-volume percentage, consulting an alcohol content calculator as needed.
  • Pour the limoncello evenly into 6 wine bottles and seal with corks. Let it rest in a cool, dark place for 1 month, giving it a gentle swirl every few days. Optionally, strain one more time to remove any remaining sediment.
  • Chill one bottle of limoncello in the freezer until icy-cold. Keep the remaining bottles at room temperature for future use.
