One-pan meatloaf for effortless cleanup.
Ingredients:
  • 1 brown onion, finely chopped
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1kg beef mince
  • 125.00 ml panko breadcrumbs
  • 62.50 ml chopped fresh flat-leaf parsley, plus extra leaves to serve
  • 70.63 gm Barbecue Sauce
  • 48.80 gm worcestershire sauce
  • 1 egg, lightly beaten
  • 2 tsp fresh thyme leaves
  • Extra 45.20 gm Barbecue Sauce
  • Mixed Salad, to serve
Instructions:
  • In a 23cm round frying pan, heat oil over medium-high heat. Sauté onion for 5 minutes until softened, then add garlic and cook for 1 more minute until fragrant. Transfer to a large bowl and let cool for 10 minutes.
  • Preheat your oven to 180C (160C fan-forced).
  • Gently remove extra moisture from zucchini and carrot, then combine with onion, mince, breadcrumbs, parsley, barbecue sauce, worcestershire sauce, egg, thyme, salt, and pepper. Mix thoroughly by hand. Press mixture into a frying pan and bake for 30 minutes until cooked. Remove any excess liquid from pan before serving.
  • Preheat grill to medium heat. Mix extra barbecue sauce and honey in a small bowl. Brush half of the honey mixture over meatloaf. Grill for 5 to 8 minutes, brushing with remaining honey mixture halfway through, until the top of the meatloaf is brown and caramelized. Sprinkle with extra parsley and serve with salad.
