Hot Dogs With Pineapple Bacon Relish

Gourmet hot dogs topped with pineapple relish, crispy bacon, zesty red onion, and tangy pickles.
Ingredients:
  • 1/4 pound thick cut bacon
  • 1/2 large red onion, chopped, about 1 cup
  • 2 cups finely chopped fresh pineapple (about 10 oz)
  • 1/4 cup chopped sweet pickles
  • 1 Tbsp sweet pickle juice
  • 8 hot dogs
  • 8 hot dog buns
Instructions:
  • Cook the bacon in a skillet over medium heat, turning occasionally until crispy and browned. Place on a paper towel lined plate to drain excess fat.
  • Sauté the onions: Keep a teaspoon of the bacon fat in the pan (save the rest in a jar, do not pour down the drain). Turn up the heat and add the chopped onion. Cook until translucent, about 5 minutes. Remove from heat. Meanwhile, finely chop the cooled bacon strips.
  • Combine crispy bacon, diced onion, juicy pineapple, and sweet pickles in a large bowl. Stir in a tablespoon of sweet pickle juice. Refrigerate until ready to top your hot dogs with this delicious relish.
  • Heat the hot dogs using your preferred method: Grill for about 5 minutes on medium heat until lightly browned, optionally toasting the buns for a minute. Alternatively, simmer in a saucepan with water for 5 minutes or microwave pierced hot dogs on a plate for 20 to 30 seconds each.
  • Create: Put a hot dog in a bun and generously spoon over some relish.
