Indulge in Chef John's easy and cheesy creamy polenta, a versatile side dish for any meat, stew, or sauce.
Ingredients:
  • 4 cups water
  • 1 teaspoon fine salt
  • 1 cup polenta
  • 3 tablespoons butter, divided
  • 0.5 cup freshly grated Parmigiano-Reggiano cheese, plus more for garnish
Instructions:
  • Bring a pot of salted water to a boil, then gradually whisk in the polenta until smooth.
  • Lower heat and simmer gently, whisking regularly, until polenta begins to thicken, approximately 5 minutes. The mixture should have a slightly loose consistency. Cover and continue cooking for 30 minutes, whisking every 5 to 6 minutes. Transition to stirring with a wooden spoon when the polenta becomes too thick to whisk. The polenta is ready when it is creamy in texture and the grains are tender.
  • Remove the pan from the heat and delicately fold in 2 tablespoons of butter into the polenta until partially melted. Then, blend in 1/2 cup of Parmigiano-Reggiano cheese until fully melted. Cover and allow it to sit for 5 minutes to thicken.
  • Stir the polenta, then transfer it to a serving bowl. Sprinkle the top with the remaining 1 tablespoon of butter and about 1 tablespoon of freshly grated Parmigiano-Reggiano cheese for garnish.
