Ingredients:
  • 2 cups self-rising flour
  • 1 pint vanilla ice cream, softened
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) while preparing a cozy spot for 12 muffins by greasing the cups or lining them with paper liners.
  • Combine the self-rising flour and vanilla ice cream until smooth. Divide the batter evenly into muffin cups, filling them 3/4 of the way full.
  • Bake the muffins in the preheated oven for 20-25 minutes until a toothpick inserted in the center comes out clean. Let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
