Elevate classic macaroni salad with a spicy twist, made effortlessly in an Instant Pot® for a speedy and delicious dish.
Ingredients:
  • 0.5 (8 ounce) package elbow macaroni
  • 1.5 cups water
  • 1 large egg
  • 0.33333334326744 cup diced red bell pepper
  • 0.33333334326744 cup cubed pepper Jack cheese
  • 0.25 cup diced jalapeno pepper, or to taste
  • 0.25 cup sliced celery
  • 2 tablespoons diced onion
  • 0.5 cup mayonnaise
  • 0.5 tablespoon apple cider vinegar
  • 2 teaspoons chile-garlic sauce (such as Sriracha®)
  • 0.25 teaspoon garlic powder
  • 0.125 teaspoon cayenne pepper
  • freshly ground black pepper to taste
Instructions:
  • Layer the macaroni at the bottom of your Instant Pot®, add water, then place a trivet on top to keep the egg above the water level. Lock the lid, set to high pressure for 5 minutes following the manufacturer's guidelines, and let the pressure naturally release for 10 to 15 minutes.
  • Using caution, carefully release pressure using the quick-release method following the manufacturer's instructions for around 5 minutes. Take off the lid, transfer the egg to a bowl of ice water for 5 minutes, and remove the trivet.
  • Leave the macaroni in the liner but remove it from the Instant Pot® to prevent overcooking. Add some ice cubes and cold water to the liner, stirring the macaroni to halt the cooking process.
  • Drain the macaroni in a colander, ensuring it is well drained to prevent a watery macaroni salad. Dry the inner liner and transfer the macaroni back into it.
  • Dice the peeled egg and combine it with red bell pepper, pepper Jack cheese, jalapeno, celery, and onion in the pot, stirring well.
  • In a small bowl, combine the mayonnaise, vinegar, Sriracha, salt, garlic powder, cayenne, and black pepper. Mix well. Add the dressing to the macaroni mixture and stir until fully combined. Transfer the salad to a bowl and refrigerate for at least 1 hour to let the flavors blend together.
