Instant Pot sausage and peppers: a cozy crowd-pleaser for game day or a satisfying autumn dinner. Enjoy on a bun or with rice/polenta.
Ingredients:
  • 2 green bell peppers, seeded and cut into strips
  • 2 red bell peppers, seeded and cut into strips
  • 1 onion, sliced, separated into rings
  • 1 (8 ounce) can tomato sauce
  • 2 cloves garlic
  • 0.5 teaspoon Italian seasoning
  • 1 (20 ounce) package turkey Italian sausage links
Instructions:
  • Preheat a multi-functional pressure cooker (such as Instant Pot) by selecting the Saute function. Once hot, sauté oil, green and red bell peppers, and onion until tender, approximately 5 minutes. Gently pierce sausage casings with a fork and place in the pot. Sear sausages on all sides until browned, about 5 minutes. Stir in tomato sauce, garlic, Italian seasoning, and salt. Seal the lid securely.
  • Turn off Saute function, switch to high pressure following manufacturer's instructions, then set timer for 8 minutes. Wait 10 to 15 minutes for pressure to build.
  • After releasing pressure as instructed in the manual, unlock and remove the lid. Cut sausages diagonally into small pieces. Serve promptly.
