Italian Chicken Sauté

Easy chicken sauté with creamy cannellini beans, fresh basil, and chopped canned tomatoes. Deliciously simple!
Ingredients:
  • 1 tablespoon olive oil
  • 1 1/4 lb. boneless skinless chicken thighs
  • 2 garlic cloves, minced
  • 1 (14.5-oz.) can diced tomatoes with Italian herbs, undrained
  • 1 (15 or 19-oz.) can cannellini beans, drained, rinsed
  • 1 tablespoon chopped fresh basil or 1 teaspoon dried basil leaves, if desired
Instructions:
  • In a large skillet, heat oil over medium-high heat until sizzling. Add chicken thighs and sear until golden brown on all sides.
  • Lower the heat to medium-low. Add the garlic to the skillet and cook for about 1 minute until tender. Introduce the tomatoes, cover, and cook for 10 to 15 minutes until the chicken is fork-tender and the juices run clear, stirring occasionally.
  • Mix in the beans and cook until they are completely warmed through. Garnish with fresh basil.
