Italian sugar cookies with almond extract can also be made with vanilla or anise extract for a delicious twist.
Ingredients:
  • 6 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 cup unsalted butter, softened
  • 1 cup white sugar
  • 6 large eggs
  • 4 teaspoons almond extract
  • 1.5 cups confectioners' sugar
  • 1 teaspoon almond extract, or to taste
  • 0.25 cup milk
  • 2 tablespoons nonpareils, or to taste
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and cozy up your cookie sheets with parchment paper.
  • Combine the flour and baking powder by sifting them into a bowl.
  • Use an electric mixer to blend butter and sugar in a large bowl until creamy. Add eggs one at a time, mixing well after each. Stir in almond extract. Gradually add flour mixture, mixing on low until combined. Roll teaspoon-sized balls of batter and place on baking sheets.
  • Bake in the preheated oven until edges are golden, for 8 to 10 minutes. Let the cookies cool on the baking sheet for 1 minute, then transfer to a wire rack to cool completely.
  • Prepare a smooth icing by whisking confectioners' sugar, milk, and almond extract in a bowl while the cookies bake.
  • Arrange the cooled cookies closely on a baking sheet. Drizzle with icing and sprinkle with nonpareils for a sweet finishing touch.
