Try this quick and delicious Japanese noodle dish with flavorful smoked trout.
Ingredients:
  • 270g packet organic somen noodles*
  • 2 x 150g packets smoked ocean trout or salmon portions* skin discarded
  • 1 Lebanese cucumber, cut into ribbons using a vegetable peeler
  • 3 spring onions, thinly sliced on an angle
  • 82.50 ml coriander leaves
  • 82.50 ml mint leaves
  • 80g bean sprout
  • 40.00 ml rice vinegar*
  • 3 tsp sesame oil
  • 30.00 ml tamari* or soy sauce
  • 18.40 gm canola oil
Instructions:
  • Prepare the somen noodles by cooking them in a pot of boiling water as per the package directions, and then proceed to drain them.
  • After rinsing under invigoratingly cold water, allow the water to drain.
  • In a large bowl, gently layer the noodles with flaked fish, cucumber, spring onions, herbs, and bean sprouts. Toss gently to combine all the tasty ingredients.
  • Combine the remaining ingredients in a small bowl and whisk with a fork. Drizzle half of the dressing over the noodles, gently toss to combine. Serve immediately, drizzling with the remaining dressing.
