Japanese-style tofu salad recipe

Try a delicious Japanese tofu salad for a light and tasty Meatless Monday meal.
Ingredients:
  • 1/4 small red cabbage, finely shredded
  • 1 small yellow capsicum, seeded, thinly sliced
  • 1 bunch baby broccoli, thinly sliced diagonally
  • 10.00 gm mirin seasoning
  • 21.00 gm soy sauce
  • 2 tsp sesame oil
  • 200g pkt teriyaki or Japanese-style marinated tofu, cut into 4cm pieces
  • Pickled ginger, to serve
  • Spring onion curls, to serve
  • 5g pkt salted seaweed snacks, shredded
  • 12.00 gm sesame seeds, toasted
Instructions:
  • Mix together the cabbage, bell pepper, and baby broccoli in a big bowl.
  • In a small jug, combine mirin, soy sauce, and sesame oil. Pour the mixture over the cabbage and toss to coat.
  • Serve the cabbage mixture in individual bowls, topped with tofu, pickled ginger, spring onion curls, seaweed, and sesame seeds. Enjoy!
