Flavorful tomato soup with garlic, basil, and black pepper - a delicious way to enjoy garden tomatoes!
Ingredients:
  • 7 cups peeled, seeded, and chopped tomatoes
  • 1 cup finely chopped carrots
  • 0.75 cup finely chopped onion
  • 1 (13.75 ounce) can chicken broth
  • 1 tablespoon white sugar
  • 2 teaspoons sea salt
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup 2% milk
  • 2 teaspoons dried basil
  • 0.5 teaspoon celery salt
  • 0.25 teaspoon garlic powder
Instructions:
  • In a large stockpot, combine tomatoes, carrots, and onion. Bring to a boil over medium-high heat, then simmer over medium-low heat for 30 minutes. Add chicken broth, sugar, and salt, stirring well.
  • In a small saucepan, gently melt butter over medium-low heat. Stir in flour to create a thick paste. Slowly pour in milk while whisking constantly until the mixture thickens and becomes smooth, approximately 5 minutes.
  • Combine the milk mixture with the stockpot contents. Add basil, celery salt, black pepper, and garlic powder for flavor. Simmer the soup on low for about 1 hour to reduce and thicken.
