Fluffy lime pie with whipped cream on a graham cracker crust.
Ingredients:
  • 1 cup graham cracker crumbs
  • 5 tablespoons butter, melted
  • 3 eggs
  • 0.5 cup key lime juice
  • 1 (14 ounce) can sweetened condensed milk
  • 1 pinch salt
  • 1 pinch cream of tartar
  • 1 cup heavy whipping cream
  • 1 lime, sliced
Instructions:
  • Preheat the oven to 325°F (165°C). Combine graham cracker crumbs with sugar and melted butter, then press into a 9-inch pie plate. Bake for 5 minutes, then cool before serving.
  • Carefully crack 2 eggs and separate the whites into a mixing bowl, saving the yolks in a separate bowl.
  • Combine one whole egg, lime juice, and sweetened condensed milk with the yolks. Whisk until smooth. In a separate mixing bowl, beat the egg whites with salt and cream of tartar until stiff peaks form. Gently fold the egg whites into the yolk mixture. Pour the filling into the partially baked crust.
  • Preheat the oven to 325 degrees F (165 degrees C) and bake for 10 to 15 minutes until set. Let it cool at room temperature, then freeze for 4 hours to overnight. Whip cream to stiff peaks just before serving. Decorate with whipped cream and lime slices. Serve and enjoy!
