Decadent cake with smooth icing, swap sherry for vanilla if desired.
Ingredients:
  • 6 egg whites
  • 1 tablespoon baking powder
  • 1 cup butter, softened
  • 1.25 cups white sugar
  • 1.5 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup milk
  • 0.5 cup white sugar
  • 1 recipe Lady Baltimore Frosting
  • 0.5 cup raisins, coarsely chopped
  • 0.33333334326744 cup chopped pecans
  • 0.33333334326744 cup chopped candied cherries
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) while you generously grease and flour three 9-inch round layer pans.
  • In a large bowl, whip together butter or margarine, 1 1/4 cups sugar, and 1 1/2 teaspoons vanilla until fluffy and creamy.
  • Blend the flour, baking powder, and salt in a separate bowl. Gradually add the flour mixture to the butter mixture in thirds, alternating with the milk in two additions. Start and finish with the flour mixture.
  • Using clean beaters, whip egg whites in a mixing bowl until soft peaks form. Gradually add 1/2 cup sugar while continuing to beat until stiff peaks form. Gently fold the whipped egg whites into the batter, then pour the mixture into prepared pans.
  • Bake until a toothpick inserted comes out clean, then let cool.
  • Combine 2 cups of Lady Baltimore Frosting with raisins, nuts, cherries, and 2 teaspoons of vanilla or sherry to make the filling. Use this mixture to spread between the cake layers, then spread the remaining frosting on the top and sides of the cake.
