Lady Lock Filling II

Easy and reliable cream filling for lady locks. Double recipe for 120 cookies, fill with pastry bag and freeze. No weeping when frozen.
Ingredients:
  • 1 (3 ounce) package non-instant vanilla pudding mix
  • 1 cup milk
  • 1 cup shortening
Instructions:
  • In a small saucepan, follow package instructions to cook pudding mix with milk. Once cooked, remove from heat, cover, and chill until cold.
  • In an electric mixer, whip shortening and sugar until doubled in volume, approximately 30 minutes. Slowly incorporate chilled pudding into the mixture. Whip until sugar is fully dissolved and undetectable when tasting the filling.
  • Pipe the filling into the lady locks using a pastry bag. Enjoy immediately or freeze for later.
