Elevate meaty pasta casserole with creamy, flavorful cream cheese.
Ingredients:
  • 2 1/2 cups uncooked mini lasagna (mafalda) noodles (4 oz)
  • 1 lb lean (at least 80%) ground beef or lean ground turkey
  • 1 jar (14 or 15 oz) tomato pasta sauce
  • 1 container (8 oz) chives-and-onion cream cheese
  • 1/2 cup reduced-fat sour cream
  • 3 tablespoons milk
  • 1 box (9 oz) frozen spinach, thawed, squeezed to drain*
  • 1/4 cup shredded or grated Parmesan cheese
Instructions:
  • Preheat oven to 350°F. Grease a 12x8- or 11x7-inch (2-quart) glass baking dish. Prepare noodles according to package instructions, then drain and rinse with hot water.
  • In a 10-inch skillet, sauté the beef over medium-high heat for 5 to 7 minutes until fully cooked, then drain any excess fat. Add pasta sauce and cooked noodles, and mix well.
  • Combine cream cheese, sour cream, and milk in a medium bowl. Mix until smooth using a spoon.
  • Layer half of the noodle mixture in the baking dish, followed by an even layer of the cheese mixture and spinach. Finish with the remaining noodle mixture and cover with foil.
  • Bake for 35 minutes, then sprinkle with Parmesan cheese and bake for an additional 5 minutes until hot. Cut into squares before serving.
