Creamy bacon and mushroom pasta twist - a delicious spin on traditional pierogi!
Ingredients:
  • 1 (16 ounce) package rotelle pasta
  • 0.5 pound bacon, chopped
  • 2 onions, chopped
  • 0.5 pound mushrooms, quartered
  • 1 tablespoon butter
  • 1 (16 ounce) can sauerkraut - rinsed and drained
  • 2 (10.75 ounce) cans condensed cream of mushroom soup
  • salt and pepper to taste
Instructions:
  • 1. Boil a generously salted large pot of water. Cook the pasta for 8 to 10 minutes until it's al dente, then drain it. Preheat the oven to 350 degrees F (175 degrees C).
  • In a large, deep skillet, crisp up the bacon over medium-high heat until golden brown. Add onions and cook until they turn translucent. In a separate pan, sauté the mushrooms in butter.
  • Mix pasta, bacon, onion, mushrooms, sauerkraut, and condensed soup in a large bowl. Season with salt and pepper, then transfer to a 9x13 inch baking dish.
  • Place in a beautifully preheated oven and bake for 45 minutes.
