Satisfy your crowd with cheesy bean burritos topped with zesty salsa.
Ingredients:
  • 12 sprigs cilantro, if you like
  • 1 can (8 ounces) refried beans
  • 6 flour tortillas (6 to 8 inches across)
  • 3/4 cup shredded Monterey Jack cheese
  • Taco sauce or salsa, if you like
Instructions:
  • Rinse the cilantro in cool water, pat dry with paper towels, then chop into tiny pieces using scissors. Set aside for use in step 4.
  • Using a can opener, open the can of refried beans. Transfer the beans to a saucepan and warm over medium heat for approximately 5 minutes, stirring occasionally with a wooden spoon until heated through.
  • Evenly spread a generous amount of the beans over each tortilla, ensuring they reach almost to the edges, using a table knife.
  • Evenly sprinkle cheese over each tortilla, then top with chopped cilantro for added freshness and flavor.
  • Fold one end of each tortilla up about 1 inch over the filling, then fold the right and left sides over so they overlap, and finally fold the remaining end over.
  • Halve the burritos with a sharp knife and serve with your choice of taco sauce or salsa.
