Indulge guilt-free with this light creme caramel.
Ingredients:
  • 125.00 gm water
  • 322.50 gm caster sugar
  • 257.50 gm reduced-fat milk
  • 505.00 gm Lite Cream
  • 4 eggs
  • fresh fruit, to serve
Instructions:
  • Preheat the oven to a cozy 160°C and lightly grease 6 ovenproof moulds with a 3/4-cup capacity.
  • In a saucepan over low heat, blend 1 cup of sugar with water. Stir until the sugar dissolves, then bring it to a boil. Cook until it turns golden, and then pour the caramel into molds.
  • In a saucepan, combine milk and Dairy Whip Lite Cream. Heat the mixture while stirring until it comes to a boil.
  • In a bowl, vigorously whisk together eggs, vanilla, and the rest of the sugar until the mixture turns pale. Then, gently combine the cream mixture with the egg mixture. Finally, pour the mixture over the caramel.
  • 1. Set the moulds in a baking dish and fill the dish with boiling water halfway up the sides of the moulds. Bake for 35 to 40 minutes until set. Chill in the refrigerator overnight.
  • Place the dish on individual plates and accompany it with a selection of fresh fruit.
