Vibrant Lacinato kale cooked with mixed lentils, onions, and aromatic cumin in a flavorful vegan stew.
Ingredients:
  • 6 leaves lacinato kale
  • 0.25 cup olive oil
  • 0.5 onion, minced
  • 1 teaspoon ground black pepper
  • 1 cup black lentils
  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1.5 tablespoons ground cumin
  • 0.5 teaspoon cayenne pepper
  • 0.5 lemon
Instructions:
  • Remove stems from the kale, finely chop them, then cut the leaves into strips the size of a pinky finger.
  • In a soup pot over medium heat, warm olive oil. Cook onion until golden and tender, for about 5 to 10 minutes. Season with freshly ground salt and pepper. Add black and red lentils, stirring to combine with onion.
  • Add vegetable broth, cumin, and cayenne to the pot and bring to a boil. Lower the heat and incorporate kale stems and leaves. Allow to simmer for approximately 20 minutes until lentils are tender and broth is mostly absorbed. Squeeze fresh lemon juice into the stew. Taste and tweak the seasonings as needed to achieve a rich, well-balanced flavor.
