Flavorful and hearty spicy soup packed with veggies, perfect with pita or chips.
Ingredients:
  • 1 onion, diced
  • 3 cloves garlic, chopped
  • 1 cup broccoli florets
  • 4 stalks celery, chopped
  • 1 baking potato
  • 5 cups vegetable broth
  • 1.5 cups cooked white rice
  • 1.5 cups uncooked green lentils
  • 2 teaspoons curry powder
Instructions:
  • In a stock pot, warm oil over medium heat. Sauté onion, garlic, broccoli, and celery until tender. While veggies cook, microwave potato for 5 to 10 minutes until soft. Combine potato and veggies in a food processor, blend until smooth. Return mixture to the pot, bring to a boil.
  • Combine the cooked rice, lentils, and aromatic curry powder in a pot. Let it simmer gently with the lid on until the lentils are tender, which should take around 45 minutes.
