Delicious pasta with prawns and mussels.
Ingredients:
  • 400g dried linguine pasta
  • 18.20 gm olive oil
  • 25g butter
  • 2 garlic cloves, crushed
  • 375.00 gm dry white wine
  • 8 mussels, scrubbed, debearded
  • 20 large green prawns, peeled leaving tails intact, deveined
  • 120g baby spinach leaves
  • Finely grated parmesan, to serve
Instructions:
  • Boil the pasta in a generously salted pot of water until perfectly cooked.
  • Drain the ingredients and return them to the pan.
  • Heat oil and butter in a large saucepan. Sauté onion and garlic until soft, about 5 minutes. Pour in the wine and bring to a boil, then reduce heat to medium. Add mussels, cover, and cook until they open, about 3-4 minutes.
  • Transfer the mussels to a bowl using a slotted spoon, discarding any unopened ones.
  • Sear the prawns in the saucepan, stirring occasionally, for 2-3 minutes until they curl and turn opaque.
  • Transfer to a bowl using a slotted spoon.
  • Heat the wine mixture until boiling, then simmer for 3-5 minutes until the liquid reduces by half. Add spinach during the last minute of cooking. Season with pepper, then stir in the pasta, mussels, and prawns.
  • Present the dish on a serving platter and generously sprinkle with Parmesan cheese.
