Low-fat apple muffins made with applesauce, skim milk, and egg whites - a delicious and healthy breakfast on the go for all ages.
Ingredients:
  • 2 cups multigrain toasted oat cereal (such as Cheerios®)
  • 1.25 cups all-purpose flour
  • 0.25 cup brown sugar
  • 0.75 teaspoon baking soda
  • 1 cup mashed bananas
  • 0.66666668653488 cup skim milk
  • 2 egg whites
  • 0.25 cup unsweetened applesauce
  • 0.25 cup raisins
  • 0.25 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and generously grease 12 standard muffin cups with cooking spray.
  • Place the cereal in a resealable plastic bag and gently crush it with a rolling pin until you have 1 1/2 cups.
  • Combine crushed cereal, flour, brown sugar, baking powder, and baking soda in a large bowl. Add mashed bananas, milk, egg whites, applesauce, raisins, and chocolate chips and mix until just moistened. Divide the batter evenly among muffin cups.
  • Bake in the preheated oven for 18 to 22 minutes until golden brown. Allow it to rest in the pan for 2 minutes before transferring to a cooling rack. Enjoy warm if preferred.
