Indulge in a decadent French chocolate mousse for a stunning dessert.
Ingredients:
  • 200g 70% cocoa dark chocolate, chopped
  • 100g butter, chopped
  • 5 eggs, chilled, separated
  • 40.00 gm caster sugar
  • 300ml thickened cream, whipped
  • Cocoa powder, for dusting (optional)
Instructions:
  • In a heavy-based saucepan over low heat, gently melt the dark chocolate and butter together, stirring occasionally for 3 to 4 minutes until smooth. Be careful not to overheat. Once melted, take it off the heat and allow it to cool to lukewarm temperature.
  • Gradually blend each egg yolk into the chocolate mixture using an electric mixer on low speed until well incorporated.
  • After cleaning the beaters, vigorously whip egg whites in a separate bowl until stiff peaks form. Slowly incorporate sugar, 1 tablespoon at a time, ensuring sugar dissolves with each addition. Gently fold a small amount of the egg whites into the chocolate mixture, then combine with the remaining egg whites mixture. Carefully fold until just mixed.
  • Divide the chocolate mixture evenly among 8 1/2-cup-capacity serving dishes. Chill in the refrigerator for 3 hours or overnight (refer to notes for more details).
  • Allow the mousse to sit at room temperature for 30 minutes before serving. Top with whipped cream and sprinkle with cocoa powder. Enjoy!
