Persian-inspired golden pan-fried fish with saffron and citrus twist.
Ingredients:
  • 0.125 teaspoon saffron threads
  • 1 tablespoon boiling water
  • 0.25 cup all-purpose flour
  • 1.5 teaspoons kosher salt, or more to taste
  • 0.5 teaspoon ground turmeric
  • 0.25 teaspoon freshly ground black pepper
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon garlic powder
  • 1.5 pounds skinless cod fillets, about 1-inch thick
  • 0.25 cup grapeseed oil
  • 0.25 orange, juiced
  • 1 orange, cut into wedges
  • 1 lime, cut into wedges
Instructions:
  • Grind saffron threads into a fine powder using a mortar and pestle. Mix it with boiling water in a small bowl, cover, and let it sit.
  • Combine flour, salt, turmeric, pepper, onion powder, and garlic powder on a large plate, spreading them evenly.
  • Pat the fish pieces dry with paper towels. Cut them into 3-inch-long pieces and sprinkle them with salt. Coat the fish evenly in the flour mixture.
  • In a large pan, heat oil over medium to medium-high heat. Cook fish on one side until perfectly golden, around 7 minutes. Flip the fish, sprinkle saffron water, and cook the other side until golden and flaky, about 5 more minutes.
  • Place the fish on a serving platter and generously drizzle with orange juice. Serve with fresh orange and lime wedges.
