Delicious Thai-inspired sticky rice with coconut and mango, perfect for dessert or breakfast!
Ingredients:
  • 1 tablespoon grapeseed oil
  • 1.5 cups sweet rice
  • 2 cups coconut milk
  • 0.25 cup water
  • 2 tablespoons palm sugar, or more to taste
  • 0.5 cup unsweetened coconut cream
  • 2 mangoes - peeled, seeded, and diced
Instructions:
  • In a saucepan over medium heat, toast rice in oil until golden brown, about 2 to 3 minutes. Add coconut milk, water, sugar, and salt; bring to a boil. Cover and simmer until rice is tender and liquid is absorbed, about 20 to 25 minutes. Stir in coconut cream before serving.
  • Serve a generous portion of rice in a bowl and crown it with succulent mango slices.
