Maple-glazed caramelized salmon fillets for a delicious twist on fish.
Ingredients:
  • 54.00 gm maple syrup
  • 23.40 gm wholegrain mustard
  • 10.60 gm soy sauce
  • 8.00 gm brown sugar
  • 4 (about 120g each) salmon fillets
  • 400g can lentils, rinsed, drained
  • 250g cooked beetroot, cut into wedges
  • 120g pkt Brand Australian 4 Leaf Salad
  • 35g hazelnuts
  • 100g marinated fetta, crumbled, marinade reserved
  • 20.00 ml white wine vinegar
Instructions:
  • Mix the maple syrup, mustard, soy sauce, and sugar in a shallow container. Coat the salmon in the mixture and refrigerate for 10 minutes to enhance the flavors.
  • Preheat the grill on high heat. Line a baking tray with foil and place the salmon on top. Grill for 3 minutes until caramelized, then flip and grill for an additional 2 minutes for medium doneness. Remove from the grill and cover with foil on a plate. Let it rest for 5 minutes before serving.
  • Combine the lentils, beetroot, salad leaves, hazelnuts, and feta in a large bowl. In a small bowl, mix the vinegar with 2 tablespoons of the reserved feta marinade. Season with salt and pepper and drizzle over the salad. Toss everything together to combine.
  • Plate the dish, placing the salmon on top, and serve promptly.
