Cool and crisp green bean salad, ideal for hot summer days, bursting with fresh veggies.
Ingredients:
  • 15 ounces frozen French-cut green beans
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 stalks celery, chopped
  • 1 medium green bell pepper, chopped
  • 1 medium onion, chopped
  • 1 cup Distilled Vinegar
  • 0.75 cup white sugar
  • 0.5 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Instructions:
  • Bring a pot of water to a boil. Cook green beans until they are just crisp-tender, which should take 4 to 5 minutes. Then, drain and rinse the green beans with cold water.
  • Combine green beans with corn, black beans, tomatoes, celery, bell pepper, and onion in a large bowl.
  • Combine the apple cider vinegar, sugar, olive oil, salt, and pepper in a small bowl. Drizzle over the vegetables, mix well to ensure they are evenly coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
