Creamy mashed parsnips and Yukon gold potatoes with a flavorful blend of butter, chives, and parsley.
Ingredients:
  • 1 1/2 pounds parsnips
  • 1 1/2 pounds yukon gold potatoes
  • 2 teaspoons Salt
  • 4 1/2 cups water
  • 2 Tbsp unsalted butter
  • 1/2 teaspoon salt
  • 1 Tbsp chopped parsley
  • 1 Tbsp chopped chives
  • 1/8 teaspoon freshly ground black pepper
Instructions:
  • Prepare the parsnips and potatoes: Peel the parsnips and slice them into 1/2-inch thick medallions. Peel the potatoes and cut them into 1 to 1 1/2-inch chunks.
  • Simmer: In a medium saucepan, add water and two teaspoons of salt. Bring to a simmer, then cover, reduce the heat, and cook for 10 minutes until fork-tender.
  • Steam: After draining, place the parsnips and potatoes back in the warm pan. Cover and allow them to steam for 10 minutes.
  • Mash parsnips and potatoes until smooth using a potato masher. Be careful not to overmash to avoid a gluey texture. Mix in butter and salt (if using unsalted butter), then incorporate chopped parsley and chives. Season with black pepper and additional salt to taste.
