Try these rich and affordable mashed rutabagas for a delicious twist on a classic side dish. Perfect for the fall season!
Ingredients:
  • Salt and black pepper
  • 2 to 3 pounds of rutabagas , peeled and chopped into 1 inch chunks
  • 2 teaspoons butter
  • 1/4 cup to 1/2 cup full-fat sour cream (more or less to taste)
  • 2 Tbsp chopped fresh dill or chives
Instructions:
  • In a large pot, immerse the chopped rutabaga in about 1 inch of cold water. Season generously with salt. Boil until tender, approximately 30 to 40 minutes. Drain and transfer back to the pot.
  • Reduce the heat to low and steam the rutabaga for a minute or two, then mash with a potato masher.
  • Stir in the butter, sour cream, and season to taste. Toss in the chopped dill or chives right before serving.
