Quick and flavorful Italian meatloaf - a family favorite for busy weeknights.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 1 cup chopped mushrooms
  • 0.5 cup chopped red bell pepper
  • 0.5 cup finely chopped onion
  • 1 clove garlic, minced
  • 0.5 cup Italian-seasoned bread crumbs with Romano cheese
  • 3 sprigs Italian parsley, finely chopped
  • 1 teaspoon Italian seasoning
  • 11 ounces ground pork
  • 18 ounces lean ground beef
  • 0.25 cup tomato sauce
  • 1 teaspoon Dijon mustard (such as Maille®)
  • 1 teaspoon dark brown sugar
  • 1 teaspoon white vinegar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give your 9x5-inch loaf pan a gentle greasing.
  • In a skillet over medium heat, warm 1 tablespoon of oil. Sauté mushrooms, bell pepper, and onion until just soft, for about 3 to 4 minutes. Add garlic and cook until fragrant, approximately 30 seconds. Remove from heat and allow the mixture to cool.
  • Combine bread crumbs, parsley, egg, and Italian seasoning in a large bowl. Fold in the cooled veggie mixture until well combined. Gently fold in the ground pork and beef. Transfer the mixture into the loaf pan and shape it into a loaf.
  • Combine the tomato sauce, Dijon mustard, brown sugar, and vinegar in a bowl to create a flavorful glaze. Set aside.
  • Bake the meatloaf in the preheated oven for 45 minutes. Remove, glaze, and bake again, brushing with glaze every 10-15 minutes until fully cooked, about 30 minutes. Ensure internal temperature reaches 160°F (70°C) using a thermometer. Finally, drain excess oil before serving.
