Meatloaf tray bake recipe

Mini flavorful meatloaves paired with bought gravy and frozen roast potatoes for a quick and easy tray bake ready in 20 mins. Let the oven work its magic!
Ingredients:
  • 750g Beef 3 Star Regular Mince
  • 25g (1 ⁄2 cup) panko breadcrumbs
  • 2 tsp onion powder
  • 24.40 gm Worcestershire sauce
  • 600g peeled, cooked potatoes, cut into large pieces (see notes)
  • 1 large brown onion, cut into thin wedges
  • 375ml (11 ⁄2 cups) gravy (see notes)
  • 125ml (1 ⁄2 cup) Organic Beef Liquid Stock
  • 1 bunch broccolini, trimmed
  • 120g (3⁄4 cup) frozen peas, thawed
Instructions:
  • Preheat your oven to 200C/180C fan forced, then generously grease a large deep baking tray with oil.
  • In a bowl, mix together the beef, breadcrumbs, onion powder, egg, and Worcestershire sauce. Season with your favorite seasonings. Use damp hands to thoroughly combine the ingredients. Divide the mixture into 4 equal portions and shape them into logs about 11cm long and 7cm wide.
  • Place the meatloaves, potatoes, and onions on the prepared tray. Drizzle with oil and roast for 25 minutes.
  • In a jug, mix together the gravy and stock. Pour the mixture around the meatloaves and potato. Arrange the broccolini on the tray. Roast in the oven for 10 minutes. Turn the potato to ensure it's coated in gravy. Sprinkle over the peas. Continue baking for another 5 minutes until everything is heated through. Season to taste and serve.
