Quick and flavorful Mediterranean chicken focaccia with tomatoes, cheese, bell pepper, and onion. Dinner ready in just 20 minutes!
Ingredients:
  • 1 (1-lb) round loaf focaccia
  • 1/4 cup mayonnaise
  • 1/4 cup pesto
  • 2 medium tomatoes, sliced
  • 4 (1-oz) slices mozzarella or provolone cheese
  • 1 medium green bell pepper, sliced
  • 1 thin slice red onion, separated into rings
  • 2 cups chopped purchased rotisserie chicken
Instructions:
  • Slice the focaccia in half horizontally. Combine mayonnaise and pesto in a small bowl, then generously spread the mixture on the cut sides of the focaccia.
  • Spread a layer of tomatoes, cheese, bell pepper, and onion on the bottom half of the focaccia. Place the chicken on top of the vegetables. Put the top half of the focaccia on top and press down gently. Cut into wedges.
