Mexican pizza: Crispy tortillas topped with seasoned beef, refried beans, and salsa for a delicious twist on pizza!
Ingredients:
  • 0.5 pound ground beef
  • 1 medium onion, diced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 1 (16 ounce) can refried beans
  • 4 (10 inch) flour tortillas
  • 0.5 cup salsa
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 green onions, chopped
  • 2 roma (plum) tomatoes, diced
  • 0.25 cup thinly sliced jalapeno pepper
  • 0.25 cup sour cream
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat 2 pie plates with non-stick cooking spray.
  • In a skillet over medium heat, cook ground beef, onion, and garlic until beef is perfectly browned and crumbly, for about 5 to 7 minutes. Remove and discard any excess grease. Then, season the beef with chili powder, cumin, paprika, salt, and pepper.
  • Place one tortilla in each pie plate, then generously spread a layer of flavorful refried beans. Divide and evenly spread half of the spiced ground beef on top of each. Place another tortilla on top. Bake in the preheated oven until the tortillas are perfectly crisp, approximately 10 minutes.
  • Once the pizzas are out of the oven, let them cool a bit. Next, spread half of the salsa on each tortilla. Top each pizza with half of the Cheddar and Monterey Jack cheeses, followed by half of the tomatoes, green onions, and jalapeño slices on each.
  • Place the pizzas back in the oven and bake until the cheese is gooey and melted, approximately 5 to 10 minutes. Allow the pizzas to cool a bit before cutting each one into 4 slices.
