Put a Mexican twist on your pizza topping for a deliciously unique flavor experience!
Ingredients:
  • 7g sachet dry yeast
  • 5.00 gm caster sugar
  • 1.20 gm salt
  • 500.00 ml plain flour
  • 1 small brown onion, finely chopped
  • 350g beef mince
  • 250.00 ml tomato salsa
  • 125g can corn kernels, drained
  • 69.38 gm tomato paste
  • 187.50 ml grated tasty cheese
  • 1 large avocado, halved, stone removed, peeled, mashed
  • 1/2 lemon, juiced
  • 30g corn chips
Instructions:
  • Preheat your oven to 200C and generously grease a 30cm round pizza tray. Note: Ensure the pan is well greased for easy removal of the pizza after baking.
  • In a jug, mix 3/4 cup warm water with yeast, sugar, and salt. Whisk with a fork until dissolved. Cover with plastic wrap and let rest in a warm place for 5 minutes, or until bubbles form on the surface.
  • Sift flour into a bowl, then add the yeast mixture and oil to create a soft dough. Knead on a floured surface for 10 minutes until elastic. Transfer the dough to a greased bowl, cover with plastic wrap, and let rise in a warm place for 25 to 30 minutes until doubled in size.
  • Punch down dough with your fist, then knead on a lightly floured surface until smooth.
  • Heat oil in a frying pan over medium-high heat. Saute onion for 3 to 4 minutes until soft. Add mince and cook for 5 minutes until browned. Stir in salsa and corn. Season with salt and pepper, then simmer for 1 minute until slightly thickened. Remove from heat.
  • Shape dough into a 30cm round and transfer to a prepared tray. Smooth tomato paste over the dough, add the mince mixture and cheese on top. Bake for 15-20 minutes until the crust is crisp.
  • Mix ripe avocado with a hint of zesty lemon juice, then elegantly spread it over the pizza. Sprinkle crunchy corn chips over the avocado to add a delightful texture. Enjoy your mouthwatering creation.
