Ingredients:
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 medium green bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 cup salsa
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 pound ground turkey
  • 1 (1.25 ounce) package taco seasoning mix
  • 0.33333334326744 cup dry bread crumbs
  • 6 (10 inch) flour tortillas
  • 6 tablespoons sour cream
  • 2 cups shredded lettuce
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) while you generously coat a medium baking dish with cooking spray.
  • In a skillet over medium heat, sauté the onion, green pepper, and garlic in olive oil for 5 minutes. Once done, remove from heat and allow it to cool slightly.
  • Combine 1/2 of the corn with the salsa in a small bowl. In a large bowl, mix the turkey, onion mixture, taco seasoning, and 2 tablespoons of the salsa mixture. Shape the mixture into 6 patties and coat them lightly with breadcrumbs. Place the coated patties in the baking dish.
  • Place the patties in the preheated oven for 10 minutes. Remove any excess liquid from the dish, flip the patties, and generously spread with the remaining salsa mixture. Bake for another 10 minutes until reaching an internal temperature of 165°F (75°C).
  • Microwave the tortillas for about 30 seconds on High to warm them up. Wrap the cooked turkey patties in the warm tortillas with sour cream and lettuce. Finish by sprinkling the remaining corn before serving.
