Microwave bread and butter pudding

Indulge in a quick and comforting microwave dessert.
Ingredients:
  • 5 slices spicy fruit bread
  • 50g butter, softened
  • 62.50 ml dried figs, quartered (see note)
  • 2 egg yolks
  • 4 eggs
  • 257.50 gm milk
  • 107.50 gm caster sugar
  • 4.40 gm vanilla extract
  • Icing sugar mixture, to serve
Instructions:
  • Butter both sides of the bread, then cut it into quarters to create triangles. Place the bread triangles in a 5-cup capacity, 16cm x 25cm heatproof, microwave-safe dish, slightly overlapping them. Sprinkle with figs.
  • In a large jug, vigorously whisk together egg yolks, eggs, milk, sugar, and vanilla. Pour the velvety egg mixture over the bread, gently pressing the bread down to soak. Let it rest for 10 minutes for the bread to fully absorb the luxurious egg blend.
  • Cook the egg mixture in the microwave, uncovered, on MEDIUM (50%) for 10 minutes or until just set.
  • Preheat the grill to medium heat. Place the bread and butter pudding under the grill and cook for 5 minutes, or until the top is golden. Serve sprinkled with icing sugar.
