Homemade microwave caramel popcorn: irresistibly sweet, salty, and addictive!
Ingredients:
  • 4 quarts popped popcorn
  • 1 cup brown sugar
  • 0.5 cup butter or margarine
  • 0.25 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking soda
Instructions:
  • Transfer the freshly popped popcorn into a spacious brown paper bag.
  • In a microwave-safe bowl, mix brown sugar, margarine, corn syrup, vanilla, and salt. Microwave for 3 minutes, stirring until well blended. Microwave for an additional 1 1/2 minutes.
  • Take the sweetened brown sugar mixture out of the microwave and mix in the baking soda. Pour this mixture over the popcorn in the bag, fold the top edge of the bag a couple of times to seal it, then give it a good shake to evenly coat the popcorn.
  • Microwave the bag for 70 seconds, shake, flip over, and microwave for another 70 seconds.
  • Transfer the popcorn onto waxed paper and allow it to cool until the coating is firm, which should take about 3 to 5 minutes.
