Microwave caramel self-saucing pudding

Whip up a quick and decadent microwave dessert that's sweet and sticky.
Ingredients:
  • 150.00 gm self-raising flour
  • 225.00 gm firmly packed brown sugar
  • 60g butter, melted, cooled
  • 128.75 gm milk
  • 1 egg
  • 125.00 ml chopped pecan nuts
  • 250.00 gm boiling water
  • icing sugar mixture, to serve
  • Ice-cream, to serve
Instructions:
  • Prepare a 6cm-deep, 6 cup-capacity, heatproof, microwave-safe dish by greasing it.
  • In a bowl, mix flour and 1/2 cup sugar, then create a well in the center. Add butter, milk, and egg, and whisk until combined. Gently stir in the pecans. Transfer the mixture to a prepared dish and smooth the top.
  • Add boiling water and the remaining sugar into a heatproof jug. Stir until the sugar has completely dissolved. Carefully pour the mixture over the pudding batter by drizzling it evenly using the back of a large metal spoon.
  • Place the dish on a microwave-safe rack or upturned dinner plate. Microwave on medium (50%) for 9 to 10 minutes until a skewer inserted into the edge comes out clean. Remove carefully, let stand for 1 minute, dust with icing sugar, and serve with ice cream.
