Microwave chocolate self-saucing pudding

Indulge in delightful chocolate creations this Easter!
Ingredients:
  • 193.13 gm milk
  • 75g butter, chopped
  • 2 teasponns vanilla extract
  • 161.25 gm caster sugar
  • 187.50 gm self raising flour, sifted
  • 32.50 gm cocoa powder, sifted
  • 100g milk chocolate, roughly chopped
  • 90.00 gm brown sugar
  • 437.50 gm boiling water
  • Caramel ripple or honeycomb ice-cream, to serve
  • Icing sugar, to serve
Instructions:
  • Combine milk and butter in a microwave-safe dish. Microwave on high for 1 minute and 30 seconds, stirring halfway, until butter is melted.
  • Add vanilla, caster sugar, flour, and 2 tablespoons of cocoa powder to the mixture. Even out the surface with a spatula. Gently press pieces of chocolate into the batter. Sprinkle with the remaining cocoa powder and brown sugar. Slowly pour boiling water over the batter using a large metal spoon to cover it completely.
  • Place the dish on an inverted microwave-safe plate and cook uncovered on medium (50%) for 10 to 13 minutes until a skewer inserted into the edge of the pudding comes out clean. Let it sit for 1 minute, dust with icing sugar, and serve with ice cream.
